RunAmok Mama's Quick Mix

10/5/2015

Are you out of THM Baking Blend??
RunAmok Mama's Quick Mix
RunAmok Mama's Quick Mix!
If you have read my glowing REVIEW on the Trim Healthy Mama Baking Blend, you know I highly recommend it.  It is, truly, sheer AWESOMENESS in a bag!  Really.

Due to its versatility and immense popularity, this Baking Blend has been, on occasion... <whispers>...  "Out Of Stock".  This could, potentially, send a person into that deep, dark, inky-black blackness of despair -- especially if they have plans for "RunAmok Mama's Strawberry Shortcake" or the "Luscious Lemon Cake", found on page 289 of the new Trim Healthy Mama Plan!

Trim Healthy Mama took a lot of time and expense to develop this exceptional product; as a proprietary blend, some of the ingredients were processed in such a way as to produce a "lighter" product, fitting the "FP" category.  *If you are following Trim Healthy Mama, you will know that "FP" stands for "Fuel Pull", and simply means an ingredient or food item which is low in both fats and carbohydrates.

Because this product is so sought after, I regularly see people share "copy-cat" recipe versions of the Baking Blend.  Unfortunately, most copy-cat recipes cause confusion and some contribute to weight-loss stalls as they are, nutritionally, way off the mark from the real Baking Blend.

I am sharing a recipe here that I think you will all enjoy.  Now, as a disclaimer, this is NOT the recipe for "THE" Baking Blend... however, for someone who wants to try their hand at making their "own" baking mix, this is pretty EPIC.  Trust me.
RunAmok Mama's Quick MixRunAmok Mama's Quick Mix
By way of comparison, the taste and texture of my Quick Mix is pretty close to the Baking Blend.  From a nutritional standpoint, definitely closer than most of the recipes floating around Facebook - so, if you are out of the Baking Blend, or waiting to place an order, this is worth a look.

DISCLAIMER:  As written, this fits as "FP".  If you use other ingredients, brands, amounts, or sub with other products, you may be changing up the fuel, thus the category this falls into.

I do have a couple ingredients listed in my mix that are not found in the Baking Blend -- These are added as they enhance the nutrition-level of my recipe here, without compromising the taste or texture of the mix.  A "win-win"!   If you prefer not to add them, my Quick Mix is delicious without them as well - but, obviously, the mix will have different nutritional values.

Happy Baking!

INGREDIENTS:
2 C Trim Healthy Mama Oat Fiber
1 C Swanson's 100% Certified Organic Coconut Flour
2/3 C Bob's Red Mill Golden Flax meal, finely ground
7 TBS THM Integral Collagen (or Custom Collagen)
6 TBS Honeyville Almond Flour
2 TBS Trim Healthy Mama Pristine Whey Powder
2 TBS Swanson Fine Milled Psyllium Husk
1 TBS Trim Healthy Mama Glucomannan (can use "Now" brand)

DIRECTIONS
In a large container bowl, carefully mix all ingredients together.  Store in an airtight container; I prefer glass.  I use a larger, re-purposed glass peanut butter jar.  This could be stored in a cool cupboard for a few weeks... but for freshness and food quality, I prefer to store my Quick Mix in the fridge.  *I am a little freakish about this sort of thing.

Thanks for sharing your recipe for the baking blend. Which 2 ingredients did you add for nutrition boost? Thanks!

Pam
1/3/2016 03:03:15 pm

The original THM mix has oat fiber, coconut flour, golden flax meal, blanched almound flour, collagen peptides, and glucomannan.
So it looks like the extra ingredients are Whey Powder and Psyllium Husk..

Jaque

Pam is correct - Thank you for replying! :)

Do you think Bernard Jensen gelatin would work as a replacement for the gelatin you have listed??

Jaque
2/1/2016 08:52:13 am

Hi Kelly! So sorry I did not see your question pending... I have never used Bernard Jensen gelatin to know for certain. Did you try it with? If so, how did you like it? :)

Sara

I would also love to know which ingredients are "optional"...I can't afford the collagen right now, could I just sub in more whey? I have all the other ingredients.

Jaque
2/1/2016 09:00:24 am

Hi Sara,

I would say make it with what you have -- but to be nutritionally similar, the recipe would need to be made as written, with the same ingredients. I would bet you could sub maybe 2 - 3 TBS whey protein, and then maybe 2 TBS oat fiber and 2 TBS flax meal to make up the bulk in place of the collagen. :) I (personally) wouldn't use a full 7 TBS extra whey, but it might work.

Thanks ,I am excited to try this!

Yay!! Did you give it a try? How do you like it?!

Darcy

How does this measure cup for cup with flour when using in recipes? Thanks for any reply. :-)

Jaque
2/1/2016 09:03:33 am

Hi Darcy,

This will measure as a terrific, cup for cup, substitute of THM Baking Blend. Compared to regular flour, it is "thirsty" - meaning you will need less flour to the wet ingredients called for in regular recipes.

It will also have a different texture - but very similar to "boxed cake mix" when making the muffins in a mug, or similar recipes.

Nancy
7/1/2016 08:17:15 pm

I actually am already in love with another make-it-yourself baking blend with no almond flour in it (because I cannot stand almond flour or milk...) and it is also a thirsty blend. Instead of using less of my baking blend, I increase the baking soda/baking powder and add a half to a whole cup of fat free greek yogurt. No real flavor change, but it really makes for a very tender crumb. Just throwing that out there in case someone else may want to try it with your awesome blend :).

Any options for nut allergies?

Jaque
2/1/2016 09:18:13 am

Hi Erin,

My recipe was originally made as a sub for Baking Blend, so I experimented until I found a very similar substitute, using similar ingredients.

You don't say what nuts you are allergic to? (Obviously, almonds - but you don't note whether you can use other nuts or not?)

As allergies can escalate and become serious quickly, I don't feel comfortable giving advice on this... but I have heard some folks have subbed hazelnut flour or even pecan flour in place of almond flour. As nuts subbing for nuts, this requires you are not allergic to ALL nuts. ;)

You could even give this a try -- Just subbing a bit more oat fiber, coconut flour and flax meal... but I don't know if you can have coconut? You could give the Allergen Free Trim Healthy Mama facebook group a try! :)

Etta Smith
3/12/2016 09:05:15 am

Based on information from the Allergy Free THM facebook page files, Sunflower Seed Flour can be used on a 1 for1 substitution for almond meal. I have used it in my version of the baking blend and it works great!

Laura
12/1/2015 12:01:01 pm

Do you use this as an equal substitute for thm baking blend? (If a recipe calls for 1 cup BB, do you use 1 cup of your blend?)

Thanks!

Jaque
2/1/2016 09:07:44 am

Hi Laura,

Yes, this would be used cup for cup as a sub for THM Baking Blend. :)

Karen

HI, I am a new slow starter to the whole process.....still trying to remember E vs S. Yesterday I made Double Chocolate muffins.... for my teenagers who skip breakfast... my one daughter is slightly allergic to Almonds and had a reaction to the muffins.... I am wondering if your recipe will still work if you eliminate the almond flour and if not can you suggest a substitute. Ps. My daughter can eat peanuts. Thank you.

Jaque
2/1/2016 09:12:51 am

Hi Karen,

Obviously, I don't need to tell you that allergies can escalate and become serious quickly, so I don't feel comfortable giving advice on this... but I have heard some folks have subbed hazelnut flour or even pecan flour in place of almond flour.

You could even give this a try -- Just subbing a bit more oat fiber, coconut flour and flax meal. :)

Julie
12/4/2015 02:29:48 pm

Yay! I have all of these ingredients...except I have my own dehydrated almond pulp. I have been *TRYING* to get a straight answer from anybody about the nutritional equivalence (or lack thereof) of almond pulp to almond meal/flour. What are your thoughts?

Jaque
2/1/2016 09:27:45 am

Hi Julie!

I use that occasionally as well, and it should turn out nicely in this.

Now, the nutritional values for the almond pulp are probably impossible to calculate, without scientific intervention and a set recipe, using a specific blender, time, straining and pressing method, as blenders vary in efficiency, we don't blend for a set time-frame, and we use different cloth/nut bags to strain... and even timing for straining and extraction will be different -- so the final product will be different from one person to the next.

Nutritionally, though, you CAN expect your final almond pulp to be leaner than regular ground almond meal, as a lot of the fat will have ended up in your almond milk. :)

(Also, I would give your dried almond pulp one more quick whirl in the blender, to make sure it is smooth before adding to this recipe.)

Hope this helps! :)

Julie

I will try it with my almond pulp and let you know the results ;)

We have a nut free house. Any thoughts on subbing something out for the Almond flour ?

Jaque
2/1/2016 09:56:10 am

Hi Genet,

Since you have no nuts in your house, but can presumably use coconut... You could try and skip the Almond flour and add an additional bit of oat fiber, coconut flour and flax in its place. :)

Erin
12/19/2015 08:02:23 am

You said some of the ingredients aren't necessary. Which ones? Thanks so much!

Jaque
2/1/2016 09:38:45 am

Hi Erin,

The Psyllium Flakes or Husk and the additional Pristine Whey Protein. :)

Jaque
2/1/2016 10:03:43 am

(These are not in the original "THM Baking Blend", so you could leave them out, if you prefer.)

Arlene
12/27/2015 06:51:55 pm

Can you use this cup per cup? Or do you need to use less of yours to equal the baking blend?

Jaque
2/1/2016 09:30:08 am

Hi Arlene,

Yes - This can be used cup for cup, in place of the THM Baking Blend. :)

Renee
12/30/2015 04:51:28 am

Could I use xanthan gum in place of the glucomannin?

Jaque
2/1/2016 09:32:16 am

Hi Renee,

Yes, I think you should see great results with Xanthan Gum in place of the Glucomannan -- Though there are nutritional differences between the two ingredients. (Not enough to make a difference in this recipe, but "overall" there is a reason we would choose glucomannan over xanthan gum for most uses.)

Hope this helps! :)

trying to create one that I can use, no almonds but I think i can sub cashew flour...tho a bit higher in carbs, but can't do dairy (no whey), or oats (oat fiber), but do have gelatin, nondairy protein powder as options... any guesses what might work.. I'm not very picky, and it has to work in oven (can't do microwave either) -- also has to work with egg substitutes... creative ideas for me? I do have coconut flour and coconut oil to use.

Jaque
2/1/2016 10:02:50 am

Hi Joyce,

I know finding alternatives can be difficult when one is dealing with multiple allergies. I would recommend joining the Allergen Free Trim Healthy Mama group on Facebook, as they will have some creative ideas which might help!

Heather
1/11/2016 11:32:45 am

I understand what you are saying about making substitutions with brand and product. So, if we needed to take out the almond flour, due to allergies, what could it be subbed with and not compromise the end result?

Jaque
5/8/2016 02:13:06 pm

Hi Heather,

It will change up the recipe a bit, but have heard of some folks subbing with hazelnet flour, cashew flour, sunflower flour... If needed, you could play with the Coconut/Oat Fiber amounts as well.

When you have allergies, one simply has to experiment a bit to see what works for them as an individual. I would recommend checking out the Allergen Free Trim Healthy Mama group for additional ideas. :)

Hope this helps!

Dona Becker
1/12/2016 08:19:32 am

Hello. Thanks for this. I'm looking for a FP alternative and yours looks great but I can't have oats, maybe not almond either. I'll try this without oats and with almonds first. Do you know what I can substitute for oats and then for almonds if necessary? Thanks. (So glad some of you ladies know how to cook and mix all this stuff together because I sure don't.) Thanks for your help.

Jaque
5/8/2016 02:16:07 pm

Hi Dona,

When you have allergies, experimentation is a must! I would recommend checking out the Allergen Free Trim Healthy Mama group for additional ideas. :)

While it will change the recipe nutritionally, some folks have subbed out the Almond flour using hazelnut flour, cashew flour, sunflower flour... If needed, you could play with the amount of Coconut...
Hope this helps!

I'm wondering if you could substitute whey protein powder for the collagen. I don't always have that on hand as it's pretty expensive.

Jaque
2/1/2016 10:06:15 am

Hi Nicole,

To be nutritionally similar, the recipe would need to be made as written, with the same ingredients. In a pinch, you could maybe substitute 2 - 3 TBS whey protein, and then maybe 2 TBS oat fiber and 2 TBS flax meal to make up the bulk in place of the collagen. :) I wouldn't use a full 7 TBS extra whey, as I think it would probably change out the texture quite a bit... but it might work.

kathy
1/20/2016 06:46:04 pm

Dp you think it is a cheaper way also? I mean doing it by yourself

Jaque
2/1/2016 09:45:13 am

This will depend upon the initial cost/shipping of purchasing your ingredients. If you are going to be using this a lot, then the recipe may save you a bit of expense - just due to the savings on the bulk ingredients.

Sara
2/6/2016 07:30:41 am

I used your baking blend to make the brainy blueberry muffin in a mug this morning, and it was amazing! I've never bought the official trim healthy mama products, I don't want to, to be honest. But I have tried several attempts at making baking blends, and they've all been tolerable, but this one is amazing. I think it's light and fluffy and moist and definitely a keeper. Thank you so much for sharing it with us. I can't wait to have my husband and daughter try it. They always tolerate trim healthy mama recipes, but the baked items are never their favorite because they are so dry and thirsty. I think this baking blend will win them over.

Jaque
5/8/2016 02:02:16 pm

So glad you liked it!! The Quick Mix is pretty close to the Baking Blend, in terms of taste, texture and nutritional values -- so it has worked very well in all recipes I have subbed. :)

Genet Harris
2/7/2016 06:02:16 pm

Ok. One more question. :)
About the pysillium husk. I assume you are talking about the powder ?
I have the whole husk, so I assume I would need to use less ?
I think that is how it works.
That one gets me a little confused. :)
Thanks for posting though :)

Jaque
5/8/2016 02:03:50 pm

Sorry Genet - My (lack of) notifications are killin' me!! <wince>

I use the powdered. I'd simply grind the whole husk, and then measure. :)

Robbe
3/17/2016 11:29:30 am

Would you store your blend in the Refrigerator or cabinet?

Jaque
5/8/2016 02:05:12 pm

I think I mentioned it in the article, but I keep mine in the fridge - because I often make a double-batch and like to ensure it stays fresh. If you are using regularly, it could probably stay in the cupboard, in an airtight container... but I wouldn't leave it indefinitely. :)

Jan
4/20/2016 07:51:35 pm

Can this be made successfully without the psyllium husk? What is this for? I don't have any. Thanks.

Jaque
5/8/2016 02:09:42 pm

Hi Jan,

Yes, you can make it without the ground psyllium husk. I used it to add fiber/texture. :)

I used Bob's Red Mill Almond Flour (14g fat, 3g net carbs, 6g protein). Will this push your recipe into S? Thanks.

Jaque
5/8/2016 02:19:11 pm

Hi Jan,

Without knowing the "serving" amount for the product, I don't know for sure how it compares. Honeyville Almond Flour is listed as:

1/4 Cup =
Total Fat 14g
Total Carbs 6g
NET Carbs 3g
Protein 6g

:)

What fuel is this quick mix? FP or S? Ive asked this before. Please respond. Thanks.

Jaque
5/8/2016 02:20:55 pm

Hi Janis,

I am sorry if I missed your question before. In the article, I show this to be "FP", as written -- making it nutritionally comparable to THM's Baking Blend. :)

This Baking Mix is AMAZING! It's SO fluffy and moist. It has greatly improved my THM experience. My daughter and my husband even love it. Thanks RunAmok! We use it to make Brainy Blueberry Muffins, Chocolate Skinny Chip Muffins, Bring on the Buttah Pancakes,Cry No More Brownies, Trimtastic Chocolate Zucchini Cake, Believe it or Not Chocolate Chip Cookies and are trying it with Perfect Pizza this week too. I am from the caribbean and thm products are not available where i am from. Oat fibre is not avaiable here and i want to know if there are any suggestions for that. Also have you heard of breadfruit flour? It is local and has a profile of 29 cal, 1,3g carbs in a 28g serving. Which ingredient would it best substitute?

I just found out I have to be 100% Gluten Free and am highly imflamatory with Flaxseed. Not sure about Psillium husk, I have to ask my functional Dr. about that one. Can I make this blend without the Flax. I'm also allergic to xantham gum and tapioca starch which so many gluten free recipes have it in. I'm anxious to start baking! I hope you can help me!!!

Jaque

Hi Roxann,

So sorry to hear this won't work for you as written - but we just have to make due with our own individual systems! Clearly, you will need to tweak this recipe to meet you where you are at personally - I would highly recommend joining the THM Allergen Free facebook group, as it is a terrific support system for THMs with special dietary considerations.
