TASTY. EASY. FUN. AND... They fit into the Trim Healthy Mama plan too! ![]() Really? A "healthy" chocolate chip cookie? Who knew there was such a thing! This twist on an old, unhealthy favorite will leave you smiling... and "on-plan" for Trim Healthy Mama! This batch did not last long... and in editing photos, both my daughters tried to convince me to make more... so we could have "better" photos. Seems a tad suspicious, as I think the pictures turned out just fine! Well, on second thought... Maybe I could make more, and use that pretty plate my father brought on his last visit. ;) INGREDIENTS: 1/2 C LifeSource Foods Oat Fiber (Swanson Oat Bran Fiber can be subbed – see THIS) 1/4 C Honeyville Almond Flour 1/4 tsp Double-acting, Aluminum-free Baking Powder* (corrected) 1/8 tsp Swanson Ultra Himalayan Crystal Salt 1/4 C Xylitol (or THM Non-GMO Erythritol) 1/4 C Homemade Brown Sugar Blend (RECIPE) 3 “doonk” scoops Organic Kal Stevia extract (or 2 “doonk” scoops of THM Organic Stevia Extract) 2 eggs, preferably organic, free-range 1 stick soft butter (or 1/4 cup soft butter and 1/4 C Nutiva Organic Extra-Virgin Coconut Oil) 1 tsp Kirkland Vanilla extract 1/4 C Lily's Premium Baking Chips (or other on-plan chocolate chips) YIELD: 24-28 cookies DIRECTIONS: Preheat oven to 375°F. ![]() 1. In a medium bowl, add all ingredients, except for the chocolate chips. Oat fiber is “dusty”, so mix slowly, with a heavy spoon until well incorporated. ![]() 3. Scoop by heaping teaspoonfuls onto cookie sheet. Bake for 10 – 11 minutes, or until they reach a nice, golden brown. ![]() 2. Add chocolate chips and mix again, until evenly distributed. Dough will be thick and “scoop-able”. (Yes, I know the photos do not match the directions. Cookie dough is pretty simple to mix... and these are much more fascinating. Don't you just want a bite of cookie dough now??) ![]() NOTE: Using a metal spatula, I found the cookies to be easily removed from a regular cookie sheet... but I also used parchment paper with one batch, and the cookies slipped right off the paper... so, if you happen to have parchment paper... ;) I think the girls are right... but I won't be taking pictures, I will be enjoying my next batch with a cup of coffee!

Did you really mean double acting aluminum free baking SODA or powder? I usually see that description on powder, not soda. These look really good and I want to try them soon! Thanks!
