RunAmok Mama's Rhu-Berry Crumble!

A delicious crumble... S for Trim Healthy Mama!

Rhubarb is an old-time favorite of mine!  So many younger mamas have never even cooked with rhubarb, I worry this will fall by the wayside!

Enter "RunAmok Mama's Rhu-Berry Crumble"!  A THM-friendly dessert, packed with the traditional old-fashioned "tart-sweet" flavor, but without the unhealthy sugar-spike!

A timeless favorite, with a healthy twist!

INGREDIENTS

4 cups fresh, sliced rhubarb (can use frozen, if you desire)
3 cups fresh, whole strawberries (can use frozen for this as well)
1 cup Honeyville Blanched Almond flour
3/4 cup Old Fashioned Oats
3/4 cup Bob's Red Mill Golden Flax meal
1/4 cup Swanson Organic Oat Bran Fiber (or oat fiber, if you prefer)
3 TBS Swanson Organic Coconut flour
3 TBS Swanson Premium Whey Protein Powder
1/4 cup homemade Sweet Blend, separated (*Or THM Sweet Blend)
4 tsp Bob's Red Mill Aluminum-free Baking Powder
1/2 tsp Swanson Ultra Himalayan Crystal Salt (or Kirkland Himalayan Pink Salt)
1/3 tsp THM Organic Stevia extract (or Kal Organic Stevia)
3/4 cup Nutiva Organic Extra Virgin Coconut Oil

Yield: 8-10 servings

Preheat oven to 375° F.

1.  Melt coconut oil in a small bowl.

2.  While coconut oil is heating,
layer the rhubarb and strawberries evenly in an 8X11" or 9X13" baking dish. 

3. 
Sprinkle with 1/8 cup of homemade Sweet Blend.

4. 
Mix dry ingredients together in a bowl, and add melted coconut oil, stirring until well-incorporated.

5.  Spread the topping semi-evenly over the top of the fruit.

6.  Place in oven and cook for 30 - 35 minutes, watching carefully the last 10 minutes or so, to prevent burning. *If using frozen rhubarb/strawberries, you may have to alter the timing just a bit.

Should be nicely browned...  I was going to take a GORGEOUS picture of this, and had an unexpected phone call.  I hollered at the kids to let it sit on the stove... came back to find HALF of the crumble GONE!

So, my dreams of a spectacular photo were dashed, and you are left with a not-so-appealing photo! 

Tastes FANTASTIC though, so I bet you will forgive me!

*Some will see the oats and worry this is a crossover... but the oats are spread out over quite a few servings, so this works for S.   ;)

Thanks so much for this recipe, my family and I LOVE it!! I've made it twice in 2 days :) I substituted sunflower seed flour for almond (since I'm allergic). Mmmmm SO GOOD!!!!

I can't wait to try this! I've been doing Trim Healthy Mama for a while, but recently have been doing it gluten and dairy free. I'm so glad I'll be able to make this recipe! I don't have any oat fibre, can you suggest a substitute?

Hi Gisele,

It might change the texture/flavor a bit, as well as the nutritional values... but you could *try* and make up the difference by adding an extra 1/8 cup flax meal, and another TBS of coconut flour. I bet it would still taste wonderful!

Wondering if for this recipe if frozen blueberries,strawberries and maybe 1 fresh peach could be used? If I melted the butter and then mixed the dry ingr to make a crumble?

Hi Carrie-Lynn,

That sounds like it would be very tasty!! Now, something to consider... If you added blueberries and a peach, you would change the recipe from an "S" to a "Crossover", as they are much higher in carbs/sugar than the strawberries and rhubarb called for in the above recipe.

Still a healthy treat, and still "on-plan"... but would not be as conducive to weight-loss as the Rhu-Berry combination. :) You could sub out raspberries, blackberries, or a triple-blend, however... :)

Hi Gretchen,

The strawberries and rhubarb are "FP", and the amount of oats is low enough to keep this from crossing over. You could also, safely, use blackberries, raspberries, or even a triple-berry blend...

If you added blueberries, apples, peaches, or other higher-carb fruits, then it would definitely become a crossover. :)

I am very new to THM. My daughter-in-law lost about 60lbs. or so on THM!She is my inspiration! So I bought the book.I have read alot of it and am trying to come up with a menu. I don't eat meat at all. I do eat fish. I will be eating alot of fish! lol I am bookmarking as many recipes that I can. I thank all of you for them! I also wish all of you the best THM you can be! Thanks also for all the suggestions I have been reading.:)

Is the topping on this recipe crisp? I'm looking for the traditional "crisp or crunch" not sure how to make it that way. I love rhubarb!! :) Thanks!!

Hi Sharon,

This is more of a "crumble" - The topping is firm, with a bit of crunch... but not in that hard-baked, "granola" sense.

If you are going for really firm, you could probably bake the topping (separately) for a few minutes on a lower setting, before following the rest of the steps -- but you would want to really watch it, to prevent scorching toward the end of the cook time.

This looks fantastic. I'm sure I'm over looking it but I can't seem to find the oven temp to bake this yummy creation. This is my first time using rhubarb but loved it when my grandma made it.
