This must be a joke, right? A busy and practical woman, “skin care” has always seemed to me an expensive, time-consuming, even selfish indulgence. My priority list seldom has “beauty” listed anywhere in the Top-50, and I just can't seem to find a rhythm where I am comfortable spending money needlessly. The upside: At 46, this has saved our family tons of money... The downside: Looking in the mirror, I can see the lack of pampering becoming more obvious. Since I am baring my soul, I will admit to having had a facial done – a $10 promotion at a beauty outlet in the mall. It was my first-ever facial. The girl looked at me expectantly when she was done and feeling a twinge of guilt, I bought three of the products. I even used them a few times – in the wrong “order”, just because I like the smell of the first product. They now sit, perched on a shelf collecting dust. I am a beauty-fail. An outdoorsy gal, too frequently stuck indoors working on the computer, I still fervently hold to the notion the sun is my friend, rarely using sunblock and preferring to soak up the sun naturally. The sun doesn't worry me, but I do find myself growing slightly concerned over the HEV light being emitted from computer screens, phones and tablets – some research is showing this exposure may cause premature aging. Since I sit in front of my screen far more than I sit in the sun, this is no good! There IS hope, however. I've found something that is making a positive difference in my skin – without being a labor-intensive routine. I was blessed with a sample of a then-unreleased Trim Healthy Natural's “The Fountain: Baobab & Rose Anti-Aging Cream”, and after months of using this, I can say it is pretty amazing stuff! you can just thank me now... Of course, I am sure most Trim Healthy Mama group members have seen the recent craze: Wholesome Yum's Low Carb Bagels with Almond Flour... Anything that goes wild on THM's facebook groups can be considered "viral" for all intents and purposes!
On its own merit, it is a terrific recipe and the ingredients fall into the "S" category for Trim Healthy Mama, so the craze is pretty much a no-brainer! Now, as is often the case since THM does not have a set upper limit for fatty foods, we can sometimes get a little too crazy, forgetting that at some point foods which are calorie-dense can stall our weight-loss progress. Since I love to eat, I decided it would be best if I could lighten this up a bit - so I substituted Trim Healthy Mama Baking Blend and Trim Healthy Mama Oat Fiber in place of some of the almond flour and made a few other adjustments as well. *This is where I hope no one notices that I promptly slather butter on my lightened up version. These are SO good! I was going to show some self restraint... but... Taking time for ourselves may feel counter-productive... Many of my readers here, as well as in my FB group (Creation's Bounty) tend to be self-sufficient, hard-working, do-everything kind of folks. This often equates to crazy-busy schedules and we rarely take time to pamper ourselves...

We have things to do and people relying on us! Who has time for frivolous anything?? I am not talking week-long spa sessions... but simple "for us" moments throughout the day, to focus on our own health and goals. Taking care of ourselves leaves us better equipped to care for others, at home or out and about. Our better health affects those around us positively. Did you read that? Taking time to focus on your health will benefit you as well as those around you. Don't feel guilty for taking some time for YOU each day - even if only for a few minutes here and there. Are you eating healthy? Taking a few minutes to plan your meals and snacks can keep you on track! Providing the right fuel for your body will give you sustained energy, promote a trim body, and keep your mood even and... pleasant. It may come as a surprise, but I am not pleasant if I am not eating healthy. (Trim Healthy Mama has been a life-saver for me!) Are you exercising? I don't mean "killing yourself", I mean simple, short bursts of exercise. This is healthy, natural and better for you than prolonged, strenuous, unnatural work-outs. Happily, oh so happily, Rhubarb season is upon us! Rhubarb seems an old fashioned", perhaps intimidating "vegetable", thus is sadly overlooked by younger cooks. If you have not yet experimented with rhubarb, yer missin' out! Thankfully, in many circles this delightful plant is making a comeback and, by mid-season, will be easily found in many grocery stores.
For those of us who regularly cook with rhubarb, opportunity to harvest it fresh is exciting business, indeed! We will gleefully churn out pies, cakes, muffins, jams, syrups... and ice cream -- until late summer, when we will frantically begin restocking our freezers for the winter season! For now... just... "Squeeeeeeeeeeeeeee!" My rhubarb patch is growing out of control! Because of this, my family and friends will tell you that rhubarb must be incredibly easy to grow... and my husband may, with a sly grin, mumble something about my "black thumb of death". (I do not know what they are insinuating...) Truly, since this is one of the only plants I can grow almost effortlessly, I am happy to report a long harvest season and a bountiful yield! To share the joy, this year I gave out some root-stock to some lucky friends - so they should each have a small harvest later this summer... In the next couple years, they should be able to divide their plants! This year, I started off with several batches of creamy, tangy-sweet ice-cream, some tasty-o-licious smoothies, and this incredible syrup - which can be used for pancakes, or in muffins, mixed into cream cheese... Don't worry... I will be sharing the syrup recipe soon! Back on-track... This Rhuberry Ice Cream will tantalize, is simple to make, and we even skipped the Ice Cream maker and used an "Ice Cream" ball -- to show you just how easy this can be! You can use your electric ice cream maker, if you feel so inclined - just follow manufacturer instructions. If you are following Trim Healthy Mama, this Ice Cream recipe is an "S". Get ready to swoon... These satisfying cheesecake "truffles" are easy to whip up, and incredibly tasty! If you are new to THM, the idea that such deliciousness is "on plan" is a shocker! If you have been following THM for awhile, this is almost "old news"... Almost...
