Chocolate, Peanut Butter, Coconut... Need I say more?

Since starting Trim Healthy Mama, I have enjoyed extraordinary main courses, delicious side dishes, and fantastic desserts... but I love stepping out on my own and creating new treats as well! 

Almond Joy bars used to make me giddy - Obviously due to the gooey coconut and rich, dark chocolate... but the garbage they are comprised of -- well, lets just say the ingredient list makes me shudder!

Peanut butter is another obsessive love... I just couldn't bear to leave it out of my newest Trim Healthy Mama inspired treat!  My daughters and I set out to incorporate ALL that is "goodness", in one, tasty little package.  Packed full of flavor... Rich, sweet, nutty, and loaded with healthy fats and antioxidants...

With other companies changing their formulations, I have updated with THM products, for uniformity and ease of purchase...  
  • 3/4 Cup Nutiva Organic Extra Virgin Coconut Oil
  • 1/4 Cup Swanson’s Organic Cocoa Powder
  • 1/4 Cup Adam’s Natural Peanut Butter
  • 1 TBS Bob’s Red Mill shredded, unsweetened, coconut
  • 1/2 tsp Kirkland Ground Saigon Cinnamon
  • 1/4 tsp Kirkland Pure Vanilla Extract
  • 1/16 tsp (pinch) THM Himalayan Mineral Salt 
  • 3 - 4 TBS THM Gentle Sweet, or 1.5 - 2 TBS THM Super Sweet Blend*

*You may also sub your favorite, on-plan sweetener, "to taste".

  1. In a small saucepan, over low heat, melt coconut oil just until liquefied. It does not have to be "warm" - just slightly above 76 degrees F.

  2. Separate coconut oil into 3 smaller bowls; 1/4 cup into each.

  3. To the first bowl, add cocoa powder, vanilla extract, a pinch of salt and 1/3 of your preferred sweetener.  Stir until ingredients are well-incorporated.

  4. To the second bowl, add peanut butter and 1/3 of your preferred sweetener.  Stir until well-incorporated.

  5. To the third bowl, add coconut, cinnamon, and remaining sweetener; stirring until well-incorporated.

  6. Next, pour the chocolate layer, evenly, into 12 molds. (1 tsp per mold.)  Place mold flat on a refrigerator shelf for a few minutes to cool until chocolate is firm.  *Not shown, but the 2nd and 3rd layers are.

  7. For second layer, remove from fridge and spoon 1 tsp peanut butter evenly over each chocolate layer. Return to fridge, until firm.  (A variation with double peanut butter would be fabulous!)

  8. For final layer, stir coconut mixture a bit, then spoon 1 tsp coconut mixture evenly over each peanut butter layer, then place back in fridge to set until firm.

  9. Serve chilled.
NOTE:
To make layered treats, you may mini muffin cups, silicone muffin cups, silicone candy molds, conventional candy molds, or even ice-cube trays. The silicone cupcake liners are GREAT!

So glad you liked them! They really ARE quite tasty... and rich enough I can be satisfied with a small portion. Best part? They are adding excellent quality, healthy fats! GOOD STUFF, all around!
