This low-carb Chile Cheese Bake is generous in protein and satiating fats, while keeping carbs to a healthy minimum! Served with salsa and a little sour cream or Greek Yogurt this is a tasty, filling family-pleaser that won't add inches to your waistline! "S" for Trim Healthy Mama! INGREDIENTS 9 eggs (preferably "farm fresh") 3 C shredded cheese (we like to use a Cheddar Jack mix) 2 C 1% - 2% Cottage Cheese (we like Daisy brand) 1/2 C Trim Healthy Mama Baking Blend (or RunAmok Mama's Quick Mix) 1 - 2 4 oz cans diced green chilies (drain excess liquid) 2 tsp Granulated Garlic 2 tsp Chili Powder 1.5 tsp Aluminum-free Baking Powder 1 tsp Ground Pepper .5 tsp THM Super Sweet Blend (or Pyure) .5 tsp Cayenne Pepper (or more if you want a bit more "kick") 1/4 tsp THM Mineral Salt (Himalayan Salt) 1 tsp butter or coconut oil, for greasing baking dish Optional: .5 lb Cooked, drained, crumbled bacon or sausage 3 - 4 green onions, diced Serve with: Salsa Sour Cream Greek Yogurt DIRECTIONS 1. Preheat oven to 350ºF. 2. Grease baking 10X10 or 9X13 baking dish a little more than half-way up the sides. 3. In large mixing bowl, mix all ingredients together thoroughly, except for the butter. *You can add the optional bacon or sausage, and/or green onions here as well. 4. Pour into prepared baking dish and then bake, uncovered for 45 - 50 minutes, or until the center is set. 5. Remove from oven and let sit for about 5 minutes before slicing to serve. Yield: 9 servings

I made this for breakfast yesterday and it was so good! It smelled delicious while baking and tasted even better. I added the sausage and served it with salsa - perfect! I also like that I have leftovers to last for several breakfasts. Thank you for sharing this!
